Greek Salsa:
2 medium tomatoes diced, small red onion, 1/2 cucumber, Kalamata olives, feta cheese, olive oil, lemon juice, oregano.
Combine all veggies in bowl.
Add feta cheese and parsley.
Mix.
In small bowl, whisk olive oil(1TBS.), lemon juice, oregano(pinch), salt&pepper.
Pour over veggies and toss.
Let sit 20 minutes.
Serve with chips or a topping for meats.
